Truth be told, I had never tried kohlrabi (a bizarre-looking vegetable if there ever was one) until the fall of 2024. But that September one of our employees made this soup for a potluck (thanks, Laura!) and I fell in love. Now I look forward to making this divine soup whenever kohlrabi is in season!
Notes
There are many variations of this recipe online. Some are chunky, some are a puree. Others include the leaves of the kohlrabi, or bay leaves. This is the one I tend to use because, for one, it is minimal fuss. For another, my love of kohlrabi means I like a 1:1 potato-to-kohlrabi ratio (or even sneak in an extra kohlrabi!). Feel free to put your own spin on it. One version uses coconut milk to give it an even creamier texture while keeping it vegan. I will link a few below.
Ingredients
- 3 tablespoons olive oil
- 1 small onion, diced
- 2 medium potatoes, peeled and cubed
- 2-3 kohlrabi, peeled and cubed
- 1 carrot, cubed (optional)
- 2 quarts chicken broth (or water and chicken bouillon, or vegetable broth if vegan)
- 3-4 sprigs of thyme
- salt and pepper to taste
- sour cream (for serving, optional)
- 3-4 sprigs of dill (for serving)
Instructions
- Peel and chop potatoes, kohlrabi, and onion (and carrot, if using).
- Heat 1 tbsp of oil in large pot and add onion. Saute until translucent.
- Add the remaining oil, along with potato and kohlrabi (and carrot if using), and saute for a few minutes. Stir until everything is evenly coated in oil.
- Add chicken or vegetable broth (or water and bouillon) and thyme, and bring to boil.
- Simmer for 15-20 minutes, until vegetables are fork-tender.
- Use an immersion blender or blend in batches to desired consistency. I prefer it half-blended and somewhat chunky.
- Season with salt and pepper.
- Serve with a dollop of sour cream (or not) and garnish with chopped dill.
